Paneer Sweet corn masala

Preparation time: 40 min
Serves - 4


Ingredients:

  • Onion – 2 medium
  • Tomato – 2 medium
  • Capsicum – 1 small sliced
  • Sweet corn – 1 bowl boiled with a pinch of salt
  • Paneer – 100gms
  • Green chili – 2 sliced
  • Ginger – 1 inch sliced
  • Garlic – 7 cloves
  • Cloves – 2
  • Cinnamon – 1 inch
  • Cardamom – 1-2
  • Oil – 4-5 tb sp
  • Jeera powder ½ tb sp
  • Chili powder ½ tb sp
  • Coriander seed powder ½ tb sp
  • Salt to taste.
  • Cashews – 5-6
  • Fresh coriander leaves chopped.

Method:

  • Heat 2 sp oil in a pan, add cloves, cinnamon, cardamom, ginger, garlic, onion and sauté till its transparent. Then add tomatoes and sauté till they are soft. Let it to cool completely.Once it is cool to room temperature  add soaked cashews and blend well in a mixer.
  • Heat 3 tb sp oil/ghee in a pan. Add chopped onions and sauté until brown. Add chopped capsicum and sauté for a minute. Add sliced green chili.
  • Add the well blended gravy to pan n allow it to boil on a low flame till oil separates.
  • Add Jeera powder, red chili powder, and coriander seed powder, salt to taste and mix well.
  • Add boiled sweet corn to gravy.
  • Add the paneer cubes which are softened in hot water/fried in oil and cook for a minute or two.
  • You can garnish with chopped coriander leaves or with crushed kasoori methi.
  • While serving hot you can even add fresh cream or a spoon of ghee/butter to kids (optional).
